History

Sosquua. Revista Especializada en Gastronomía is a biannual scientific publication edited since 2019, biannually by the Fundación Universitaria San Mateo in Bogotá-Colombia.

The name Sosquua refers to Colombian aboriginal languages ​​to taste - to know how to manage cultural heritage, innovative practices in haute cuisine, opening fields, fusion and gourmet.

Open access

Sosquua. Revista Especializada en Gastronomía is committed to preserving the environment, which is why it is published digitally through the open access platform: Open Journal System –OJS; which allows the consolidation of efficient editorial management for each phase and actor involved in the publication process.

  • It does not generate any payment to the authors for article processing costs (APC), nor charges for article shipping.
  • Likewise, the online subscription is free and free.

The authors of Sosquua. Revista Especializada en Gastronomía provide the circulation of its contents to the Fundación Universitaria San Mateo through a Creative Commons Attribution-NonCommercial-NoDeriv 4.0 license that allows third parties to share the work as long as its author and its first publication are indicated in this magazine. However, the generation of derivative works or commercial use of the original work is not allowed, that is, only non-commercial uses and purposes are possible.


Both the authors and the readers of Sosquua. Revista Especializada en Gastronomía, they adhere to the rules of open access to content and the double-blind review system carried out by a Commission of Experts (referees) guided by an International Scientific Committee; thus allowing agile and pertinent publication decisions according to the explicit declaration of editorial ethics.
