About the Journal
History
Sosquua. Revista Especializada en Gastronomía is a biannual scientific publication edited since 2019, biannually by the Fundación Universitaria San Mateo in Bogotá-Colombia.
The name Sosquua refers to Colombian aboriginal languages to taste - to know how to manage cultural heritage, innovative practices in haute cuisine, opening fields, fusion and gourmet.
Thematic areas
Sosquua. Revista Especializada en Gastronomía publishes scientific publications aimed at professional gastronomes-chefs, researchers, teachers, scholarship holders and postgraduate students in the following subject areas:
- Gastronomy
- Product development
- Gastronomic entrepreneurship
- Cultural rescue of gastronomic heritage
Open access
Sosquua. Revista Especialiazada en Gastronomíais an open access journal committed to the free circulation of academic knowledge in Gastronomy, understood as an interdisciplinary field that articulates culture, territory, memory, sustainability and food practices.
The journal adopts the Diamond Open Access model, which means that:
- No submission, processing, or publication fees (APCs) are charged to authors.
- All content is immediately and freely available to readers.
This model is made possible by the institutional support of the San Mateo University Foundation, which covers the publishing costs as part of its commitment to scientific dissemination and equitable access to knowledge.

The content published in Sosquua. Revista Especialiazada en Gastronomía is distributed under a Creative Commons Attribution-NonCommercial-NoDerivatives 4.0 International License, which permits its consultation, download, and use for academic and non-commercial purposes, provided that proper attribution is given to the authors and the journal.
