Abstract

In the area of ​​gastronomy, throughout professional experience it has been shown that, when professionals in the culinary area try to establish the importance of enhancing the traditions of the country, they focus on the development of the kitchen; they put aside the preparations of ancestral drinks. This investigation analyzes the native beverages of the Caribbean region, framing them at a cultural, social and geographical level. It uses information gathering tools on the knowledge of preparation within the capital's restaurant sector, with people from the region. Thus, it is possible to identify training topics for the development of the Colombian gastronomic.
