Abstract

Faced with the impossibility of objectively defining Mexican cuisine, a distinctive sociocultural feature of the order of discourse of this cuisine is sought. Something that occurs in the analysis of the recipes of what is considered the first Mexican cookbook: Dominga Guzmán's Cookbook (18th century).
